Sorry, but I believe that if you just find low-carb versions of the things you normally eat, you don't lose your taste for those things, which makes it too easy to go back to eating the regular ones. Also, you're not getting all the nutrients you could be from good foods.
How about a celery stick with natural peanut butter, natural yoghurt with some berries and nuts. For icecream, whip some cream, add berries and freeze
