I am somewhat new to cooking! I am looking to make some fairly easy, awesome meals to impress my BF. He has been the only one working for months and I am at home looking for a job and taking care of the house (somewhat). I would love some great meal ideas!!
Take about 6-8 potatoes and peel them and slice about 1/4 inch thick boil for about 8 minutes in salted water. You want them still firm but not cooked to peices.
Drain them and put a layer in a casserole dish(layer does not have to be neat just dump some in and spread it out. My sister in law once made them for my brother and she "arranged" the potatoes in the dish. lol) . Put about 1/4 butter(not melted but sorta spread around) put sliced american cheese over the layer, put a layer of potatoes, butter, cheese until all potatoes are used. End with cheese on top and bake in 400 degree until cheese melts. I turn my oven on broil because I like my cheese to brown a bit.
Makes a great meal with pork chops or chicken and goes well with peas and corn. This is my dh and my brothers favorite side dish!

Salad Dressing/Oven Barbeque Chicken (Only call it whatever dressing you're using, so "Russian Chicken" or "Ranch Chicken" -- it sounds much fancier):
Use breasts or chicken pieces or chicken quarters. Remove chicken skins. Place in Baking pan. Coat with salad dressing (thick and/or creamy is best) or barbeque sauce. Bake at 350 for an hour or until cooked all the way through.

I made up a dish once that I thought was very good - warning, you have to like balsamic vinegar.
Take a chicken breast or two and place in skillet with oil and balsamic vinegar and get it cooking. Flip over a couple more times and I keep adding vinegar to it. (Have I mentioned I LOVE balsamic vinegar?) Chop up some tomatoes (you could probably add just about any vegetable) and garlic toss in with chicken cover and reduce heat. Flip around a couple more times, add more vinegar, remove when vegetables are at desired consistency. Eat by itself or on a bed of spaghetti. Delicious!
