Wheat Free Bread Machine Recipe Please HI
Wondering if anyone has a wheat free bread recipe, preferably for a bread machine. Have tried one recipe , and it turned out pretty horrible!!
Any help would be great, thanks

Wheat-free Rye bread recipe! Posted By: Veera (O+)
Date: Thursday, 3 June 1999, at 12:15 a.m.
I finally tested my breadmaker with a rye-spelt recipe, and it was a roaring success! Here's the recipe for a 1 1/2 loaf:
1 cup + 1 tablespoon water
1 1/2 tsp salt
2 tsp packed brown sugar
2 cups rye flour
1 cup spelt flour (I used white spelt)
1 tbsp butter or oil (I used butter)
1 1/2 tsp yeast
I set my machine at the basic setting, with a dark crust, but you could probably try medium, I think my machine needs to be one crust setting up. The dough will rise plenty, but once it starts baking, it won't rise anymore, so you end up with a short loaf that has a bumpy crust. It's normal!!!
I tested it on my mom, who's Finnish, and is a rye bread expert, and she thought it was delicious. Next, I'll increase the ratio of rye to 2 1/2 rye - 1/2 spelt, and see what happens. I'll keep you posted on the results.

Rice Flour Banana Bread (wheat Free)
I always seem to have rice flour on hand (for Vietnamese and Thai food), and am always looking for ways to use it up. This recipe is from the incomparable Beatrice Ojakangas' "Great Whole Grain Breads" (Simon & Schuster, 1984,1993). The recipe calls for small loaf pans, probably to reduce the baking time. Might be possible to use a large pan, but I haven't tried.
1/3 cup softened butter 2/3 cup sugar 2 eggs 3 tablespoons buttermilk 1 teaspoon lemon extract 2 cups brown rice flour or rice flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup mashed ripe bananas 1 cup toasted coconut
Preheat the oven to 350 degrees. In a large bowl, beat the butter and sugar until creamy. Beat in eggs, one at a time. Stir in buttermilk and lemon extract and mix well. Combine rice flour, baking powder, baking soda and salt and add to the butter mixture. Stir in bananas and coconut and mix well. Spoon the mixture into two greased mini loaf pans (5 1/2 by 3 inches). Bake 50 to 55 minutes, or until a wooden pick inserted into the center of the bread comes out clean. Cool in pans 2 minutes, then turn out and cool completely.

Wheat-Free Herb and Onion Bread Original recipe. This recipe uses spelt flour instead of wheat flour. For best results, obtain white spelt flour from a natural food market or from http://shop.bakerscatalogue.com/items/ . 1/2 cup milk 1 1/2 tablespoons turbinado sugar 1 teaspoon salt 1 tablespoon butter 1 tablespoon saf-instant yeast 1/2 cup warm water 2 1/4 cups white spelt flour 1 leek, 3 inches of white part 1/2 teaspoon dried dill 1 tablespoon fresh rosemary 2 green onions
Place the leek, green onions, dill and rosemary in a blender or food processor and mince. Heat the milk and dissolve in it the turbinado and salt, and melt in it the butter. In a large bowl, dissolve the yeast in the warm water. Once the milk has cooled, and the milk, flour, and leak/onion/herb mixture, and stir well with a large wooden spoon. When the batter is smooth, cover the bowl with a towel and let the dough rise in a warm place for about 45 minutes. Punch down and beat vigorously for a few minutes, then turn into a greased bread pan. Let stand in a warm place for about 10 minutes before placing in a pre-heated 350-degree oven. Bake about 45 minutes.
