Default Wondering what everyone thinks of this recipe...

My mom makes this a lot during the summer because it's a cold salad, it's easy to make, and it really hits the spot on hot days. I've been trying to do the low carb/low GI thing this summer, and I was wondering if you guys thought it fits into that.

Marinated Pea Salad

for marinade:
3/4 cup vinegar
3/4 cup sugar
1 tablespoon water
1 teaspoon salt
1/4 teaspoon pepper
Combine and boil for one minute, then let cool completely.

vegetable mixture:
1 (17 oz) can small English peas, drained
1 (16 oz) can shoepeg white corn, drained
1 (2 oz) jar diced pimento, drained
1 cup finely chopped onion
1 cup finely chopped celery
Combine remaining ingredients and toss lightly. Pour marinade over vegetable mixture and stir gently. Cover and refrigerate over night.
Serving: 1/2 cup

Peas and corn tend to be high in carbohydrates and impact my sugars greatly.

Also, with 3/4 cup sugar, I don't think the recipe could be considered low GI.

Perhaps if you used splenda instead or some other sugar subsitute that would be a step in the right direction.

I dont know I am not a big pea fan. I bought this book that has PCOS specific recipes some of the stuff is very tasty. I am excited cause the book has shrimp in the recipe and that is one of my favorite things to eat. Not fried of course, but at least I still get to eat it LOL.
