Default Your Favorite Vegetarian Recipes (eggs and milk, OK)

Hi, cysters,

My cousin in England has a college age daughter that will be visiting us around Thanksgiving time. We are happy and excited! She is a vegetarian, but says she eats eggs and milk ingredients. She doesn't like mushrooms. She doesn't eat any meat, including fish.

I am wondering if any of you have any favorite veggie recipes, particularly main dinner dishes? I do plan to bake a "tofurkey" along with our turkey for Thanksgiving for her.

I know I can look up recipes on the internet, but I would rather try some tested and true recipes from you cysters!

Herbed Yogurt Tomatoes
These are a nice side dish, but could easily be paired with a hearty rice and lentil or bean dish and a salad for a whole meal.

4 large tomatoes
1/2 cup plain fat free yogurt
1 tsp. flour
1 1/2 tsp. chopped fresh marjoram or oregano
1/4 tsp salt
1/4 tsp. pepper
1/4 cup fresh grated Romano Cheese

Pre-heat oven to 400 degrees F

Cut 1/2 inch slice from stem end of each tomato. Place, cut sides up, on baking dish coated with cooking spray, set aside.

Combine yogurt and next 4 ingredients, stir well. Spread 2 tbsp. yogurt mixture over tomatoes; sprinkle each with 1 tbsp. grated cheese.

Bake at 400F for 30 minutes.

Yields: 4 servings

Ajani...those sound perfect! I know that she and her family are always trying to grow their own tomatoes in their greenhouse over there. I know they love tomatoes. Thank you.

You are very welcome. I hope they work out for you. I'm sure that you can google many stuffed tomato recipes, some with bread crumbs and cheese, some with fresh herbs... There are lots of posibilities, and if you can get some good sized yellow tomatoes, you could make a very attractive platter.
