I coated two boneless ch breasts w/ taco seasoning and then covered them w/ salsa. Covered in foil and then a lid to make sure it stayed moist. They sat in the fridge for a few hours but I'm not sure that's critical. Cooked for about 20-25min at 375 degrees. Then I shredded it and added some grated cheese. Scooped into some taco shells and added toppings as desired.

Oooooh....I'm SO excited!! I'm making this tonight - thanks for the tip!! I have the chicken breasts "marinating" in the fridge as we speak. And I just called a friend of mine to tell her - she thinks it sounds great too!
