Default YUMMO smashed potato recipe from Rachel Ray

I'd post a link but I can't find one. I just saw this on TIVO yesterday so I'm not sure if it's a new recipe or not but WOW it sounded soooooooo goood!

She used tiny red potatoes but you can also use baby Yukon golds. Cut them as needed so you have pieces the same size. Boil until soft, drain and put back in the same hot pot.

She microwaved butter, minced garlic, green onions, S&P until the butter was melted. After mashing potatoes a little she added the butter mixture and a *little* milk.

The secret ingredients: She added *about* (you know how little she measures!) 1/2 c. Ricotta cheese and 1/2 c. Parmesan cheese!!! Whooohoooo!

Continue mashing until the desired consistency.

I'm trying this tonight w/ grilled steak and some roasted green beans! I can't wait! I think my DH will flip his lid for those potatoes!!

she also does a smashed potato recipe with a touch of wasabi in it...yum!

i love rachel ray! she is the best and i have used soooo many of her tricks to make things quickly.

for my mashed potatoes, i never peel them, just dice and toss in chicken broth. when they are soft, i drain them (keeping the broth handy) add 1/4 stick cream cheese (we use nufatchel) and mash adding the broth until they are creamy. i season with sea salt and ground trio pepper. (kids love these and beg for them.)
