Default PCOS Blaster Muffins

I've just edited this with the NEW and improved recipe!

I think these should now be re-titled PCOS BLASTER MUFFINS.
They contain both farinetta and soy lecithin, super-high in d-chiro-inositol (and the lecithin makes the muffins light and fluffy, what a bonus!), as well as lots of cinnamon, also rumored to help regulate insulin levels, and flaxmeal, high in EFAs which are also supposed to help regulate hormone levels, among other benefits.

Oh, and I think they taste really good! I eat them warm with a little butter.

TWO muffins contain:

50g farinetta, 9.75g lecithin
890mg d-chiro-inositol (685 from farinetta; 205 from lecithin)
35g carbs (18 from farinetta; 4 from blueberries, 13 from bananas) - this doesn't include non-digestible fiber carbs
8.3g fiber from farinetta (more from flaxmeal; haven't calculated)
18.5g protein from farinetta


Buckwheat Farinetta Muffins

Buckwheat farinetta muffins

2 ½ c. buckwheat farinetta
½ c. soy lecithin
1 T. baking powder
1 t. sea salt
4 t. cinnamon
1/2 c. flaxmeal (or fresh-ground flax seeds)

3 mashed bananas
2 T. brown rice syrup
4 ½ t. stevia plus FOS (spoonable stevia, not the pure extract)
2 eggs
¾ c. water
3 T. cold-pressed oil
2 t. vanilla
1 ½ c. blueberries

Mix dry ingredients. Mix wet ingredients, including dry stevia. Add wet to dry ingredients and mix with fewest possible strokes.

Bake at 375 deg. For 25-30 min. Makes 12 muffins.

I just got my buckwheat in the mail yesterday and I added some into my yogurt today. If you get anymore recipes, please share them with me, because I have no idea what how I'm going to get my daily dose everyday!

Two of these give you almost a 1/2 c., and I actually look forward to having them as a snack!

I also eat 2 T. with my breakfast, which consists of the 2 T. of farinetta, some ground seeds for EFAs, a mashed banana, 1/4 t. vanilla, some stevia to sweeten, and a bunch of plain yogurt. It has a pudding-like texture that I actually like.

I'm going to try the "variation" I suggested next week, I'll let you know how they come out! You can tell they're whole-grain muffins (they're not cupcakes ;-), but they're not dry or leaden.
Whip up a batch and let me know how you like them!

I'm going to make some muffins tonight. Thanks so much for the recipe. I can't wait to try them! I love muffins, so I'm really looking forward to getting my daily dose by having to eat 2 of them a day!

I tried them this week and they worked out pretty good. Not quite as tasty as I hoped, but then again I had to improvise because I didn't have as many bananas as I thought I did. So I put in 2 bananas and some applesauce. I made it with cranberries and carob chips, and I think I'll go a little heavier on the carob chips next time.

I have lots of bananas, so when I make more Monday I should be able to do it right.

Thanks for the recipe, Erin! If you come up with any other great recipes for buckwheat "medicine" please post 'em!

Hi Tracy,

A couple of comments - the extra banana *really* helps the recipe. The first time I made it I only used two and decided it really wasn't enough. Don't skimp on the banana.

Also, I have tried the cranberry/carob chip version and while I like it for variety, I decided I like the blueberry/poppy seed version better - the blueberries add a touch more sweetness and make them moister. Also, the cranberries were a bit tart for me, I think I might try some other kind of berry with the carob chip version - any ideas anyone?

And did you use real wheat gluten, not just wheat flour? Make sure you use the gluten.

I'm bumping this up... I haven't been posting here for a while, kind of fell off the wagon of treating my PCOS...

Anyhow, I saw that they're not going to make the DCI pill anymore, which I think makes it even more important to figure out how we can get it from food.

I'm in the process of making this recipe even better (fluffier muffins, even more DCI, even less carbs); I'll post it when I've made a test batch I'm happy with.

I'm using these in conjunction with an otherwise low-carb diet, which makes it nice because then I can have a muffin for breakfast or a snack instead of eggs or cheese sticks!

What is buckwheat farinetta? How does it compare to buckwheat you can buy whole at the store?

And what is FOS???

Buckwheat farinetta is like the bran of the buckwheat - made from the most nutritious part of the plant (buckwheat is a flower, not a grain, it is not related to wheat).

Buckwheat farinetta is one of the foods highest in the nutrient d-chiro-inositol (DCI), a kind of B-vitamin, that has shown great promise in treating PCO. It is important to the proper functioning of insulin, some people have thought maybe people with PCO are deficient in it, or don't process it properly.

Soy lecithin is also extremely high in DCI; I've added that to the recipe now... it's really getting better and better I think even people not used to "healthy" food might find these to be tasty!

Sorry, you also asked about FOS... that stands for fructo-oglio saccharides, which is added to stevia to bulk it up so you can measure it (otherwise it's so sweet it's hard to measure a small enough amount).

FOS does not add any carbs and actually are good for the proper functioning of your intestinal flora.

Thank you so much, Erin3, for the "blaster muffins" recipe! I've been eating 2 a day for over a week now, and I don't know yet if they will help my cycles, but I feel so healthy (and hopeful) just eating them! A couple of questions for you all:
- Do you have any other good farinetta recipes?
- How long did you eat them before your cycles got regular?
- Anyone else had any success with these muffins (or farinetta)?
