Yummy, easy balsalmic chicken salad OK, I hate to cook, so this "recipe" isn't exactly going to be scientific. Just use amounts that look right. I find it easy to make on the fly, and it looks really impressive!
Make a bed of salad using:
raw spinach (or whatever lettuce you like)
carrots (grated or slices off a potato peeler)
red pepper (very thin strips)
green onion
cucumbers
Slice a chicken breat into pinky-finger size pieces. Saute it on the stovetop in a mixture of balsalmic vinegar and olive oil. Use your best judgement on amounts, but I usually use 2 parts vinegar to one part olive oil.
Place the chicken on top of the salad and serve with balsalmic vinegrette dressing.
The chicken is sooooo yummy! This has been a great low-carb dinner for me on many occasions.
