Yummy fruit and cream cups for dessert! I found this recipe in 500 Low Carb Recipes (there, it's called strawberry cups), and I love it. It satisfies my taste for sweet and creamy desserts.
Basic recipe:
1 cup water
1 package sugar-free lemon gelatin
10 oz frozen strawberries, partly thawed
3/4 cup heavy cream (I've also used half&half)
Boil the water. Put the gelatin and boiling water into a blender and whirl just long enough to dissolve the gelatin (10-15 seconds). Add the frozen fruit and whirl again, just long enough to blend it all together. Put the whole blender container in the refrigerator for 10 minutes until it starts to thicken. Add the heavy cream and blend just long enough to mix it all together (10-15 seconds). Pour into dessert dishes and chill. Top with homemade whipped topping.
For homemade whipped topping, mix 1/4 cup of heavy whipping cream and splenda to taste with a mixer until it turns into whipped cream (just until stiff peaks form, any longer and it might break, and you'll never get whipped cream out of it).
Anyway, that's the basic recipe. Here are my suggestions for changes.
1)experiment with different flavors of gelatin and different frozen fruit.
2)use any gelatin and leave the fruit out altogether. Instead, use 8 ice cubes. This works if you just want the fruit and cream taste, but not the fruity texture.
3)Here's my fave of all: Instead of water, use boiling OJ, and a pack of unflavored gelatin. I added drained, partially frozen mandarin orange segments (you could use the drained juice instead of prepared OJ). It tastes like a creamsicle.
