Yummy very low carbs cheesecake! I found this recipe on at Atkins community recently, tried it, and now have tasted one of the most delicious cheesecakes ever! ^_^ The Cheesecake of all Cheesecakes
16oz cream cheese
1 c Splenda
3 eggs
24 oz sour cream
2 tsp vanilla extract
1 stp almond extract
*I didn't put the almond extract on mine and used strawberry cream cheese instead and still worked!*
Soften cream cheese in microwave (do not cook) and then blend with Splenda in seperate bowl, mix eggs with sour crea, vanilla, and almond extract. Add to cream cheese/sugar mixture and blend well. Crust (optional):

Toast 1/2 cup crushed almonds in a frying pan in 1.5 tbsp lightly browned butter. Sprinkle a light dusting of Splenda on it and press mixture into glass baking dish you're going to bake cheesecake. (you can make crust before you mix your cheesecake)
Pour into glass baking dish and bake at 350 for 30-40 min.
*NOTE* at the end of bake time, turn off oven, but leave cheesecake in for ONE hour
After one hour, leave at room temp for 30 min, then cover and move to fridge to chill.
I ate mine with fresh strawberries because it is so good you don't need a toping, but here's one just in case you want to give it a try. ^_~ Happy low carb eating! *hugz* ~Mari Strawberry whipped cream
Take whipping cream and mix with 1/2 c Splenda until peaks form.
Take pack of sugar free strawberry jellow and open into 1/3 cup boiling water. Mix with 1c cold water until mix is disolved. Pour this jello liquid over whipped cream. Mix that together and refrigerate.
